filamentoso no es precisamente una palabra que evoque la suculencia culinaria, pero este tipo de hongos microsc\u00f3picos son aut\u00e9nticas m\u00e1quinas de generar prote\u00ednas de calidad mediante la fermentaci\u00f3n, y la NASA ya ha puesto los ojos en ellos como intendencia para viajes a Marte.<\/p>\n\n\n\n<p>Parece ciencia ficci\u00f3n, pero es uno de los proyectos que se estudiar\u00e1 en la primera edici\u00f3n del m\u00e1ster Food Fermentation, que impartir\u00e1 Basque Culinary Center (BCC, San Sebasti\u00e1n, Espa\u00f1a) a partir del 3 de noviembre, coordinado por el doctor en Qu\u00edmica Aplicada por la Universidad Aut\u00f3noma de Madrid Cipriano Carrero.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" \/><\/figure>\n\n\n\n<p>&#8220;No existe un curso similar en el mundo&#8221;, explica en una entrevista con EFE, y detalla que el curso cuenta con un 50 % de contenido cient\u00edfico t\u00e9cnico, un 25 % de cultura de la fermentaci\u00f3n en diferentes entornos y el resto se centra en la parte gastron\u00f3mica propiamente dicha con el dise\u00f1\u00f3 de nuevos alimentos.<\/p>\n\n\n\n<p>Carrero codirige con la Ames Research Center -un centro de investigaci\u00f3n de la NASA que ha participado en misiones espaciales- la tesis de la italiana Alessandra Massa, profesora de desarrollo y tecnolog\u00eda de alimentos de BCC, sobre el crecimiento de los hongos filamentosos mediante la fermentaci\u00f3n y sus aplicaciones gastron\u00f3micas.<\/p>\n\n\n\n<figure class=\"wp-block-image generadora de prote\u00ednas de calidad puede ser valioso, no solo en el espacio, sino en momentos de cat\u00e1strofes como las causadas por un hurac\u00e1n o un terremoto.<\/p>\n\n\n\n<p>&#8220;Por ejemplo, si solo hay hojas que no sean t\u00f3xicas, podr\u00edan convertirse en prote\u00ednas tras ese trabajo que realiza un moho filamentoso&#8221;, explica Carrero.<\/p>\n\n\n\n<figure EFE\/Javi Colmenero<\/figcaption><\/figure>\n\n\n\n<p>La fermentaci\u00f3n, el proceso que ocurre en ausencia de ox\u00edgeno en el que microorganismos descomponen sustancias org\u00e1nicas complejas y las transforman en etanol o \u00e1cido ac\u00e9tico, se ha utilizado desde hace siglos en todo el mundo.<\/p>\n\n\n\n<p>&#8220;Este es el concepto tradicional para un bi\u00f3logo como yo de lo que es fermentar, pero en el \u00e1mbito gastron\u00f3mico es m\u00e1s amplio.
